Buffalo Chicken Meatloaf

Anyone who knows me knows I am OBSESSED with buffalo anything and everything. I also love meatloaf, so I decided to combine the two so I could start taking lunch from home, or as a quick family dinner. Filled with chicken, buffalo sauce and blue cheese dressing, this was a hit and vanished quickly. This is especially delicious with some ranch blue cheese mashed potatoes.

Ingredients

*1 lb ground chicken

* 1/2 cup diced celery

*1/4 cup shredded carrot

*1 egg

*1/2 cup breadcrumbs

*1/2 cup buffalo sauce (I use hot, but can sub in medium or mild) plus 1/4 cup

*3 tbsp blue cheese dressing

*3 tbsp honey plus 2 tbsp

Directions

Preheat oven to 350. In large bowl combine all but 1/4 cup buffalo sauce and 2 tbsp honey.

Mix well until not runny.

Place in lightly greased loaf pan and bake 35-40 minutes.

Combine remaining sauces and glaze meatloaf, then bake additional 5 minutes to set.

This is one of the quickest meals I have made, and it vanished just as quickly as I made it. Enjoy!!
