Wild Rice and Chicken Soup

With winter rapidly approaching I often turn to warm, filling soups, stews and chilis for family meals. Soups are often easy to make and always a hit with most everyone. This soup was so easy it practically cooked itself! Since I was feeling the effects of a slipped disc in my back, I did use a rotisserie chicken so I only had to shred it, making this a semi-homemade meal that tastes like it took hours to make.

Ingredients
* 1 whole rotisserie chicken
* 24 oz. carton low sodium chicken broth
* 24 oz carton refilled with water
* 1 1/2 cup milk
* 2 tbsp butter
* 2 stalks of celery
* 1/2 cup diced red onion
* 2 boxes Rice a Roni wild rice mix (with seasoning)
* 1 bag frozen mixed vegetables ( corn, peas, carrots, green beans)
* 2 tbsp parsley
* 1 tsp cayenne
* 1 tbsp oregano
*1 tsp garlic salt
* 3 tbsp black pepper
Directions
Shred chicken, and dice onion and celery, put celery and onion in stock pot.



Pour chicken stock, water and milk in pot. Add butter and spices and bring to boil.

Once soup starts boiling, add in rice with seasoning packets and vegetables. Simmer 25 min until rice is tender, stirring frequently.

Once rice is tender, put chicken in pot and simmer around 15 minutes or until completely heated through.
This soup is definitely going to be in frequent rotation for my winter meals, this is sure to be a hit in your family as well!
