Sorry for the delay in posting, this month has been flying by, and with an oral surgery and the passing of my Grandmother I haven't felt up to posting. I am posting now in honor of my Grandmother, one of the strongest, sweetest women I know. Along with the not feeling up to posting, I have been slightly forgetful after the surgery while on pain medication and forgot to take pictures during the preparation process for this, so I apologize in advance. I made this for my boyfriend and his family and it was a HUGE success. the pieces of chicken were enormous, but they still almost all cleaned their plates. I served this chicken with a simple garden vegetable rice, some steamed broccoli and cauliflower, and some mini pitas that I picked up and tossed in the oven for a few minutes to warm.
Ingredients
* 4 boneless, skinless chicken breasts
* 2 cups plain Greek yogurt
* Juice and zest of 1 lemon
* 2 tsp salt
*1 tbsp pepper
* 1 tbsp parsley
* 2 tbsp dill weed
* 1 tbsp thyme
* 1 tsp oregano
* 1/4 cup very finely diced cucumber.
Blend all ingredients aside from chicken well, cover and refrigerate one hour so flavors blend well. Take half of mixture and marinate chicken another hour. Preheat oven to 450. Place chicken in foil lined baking dish and cook 20-30 minutes. Pull out of oven, and cover with remaining mixture. Bake another 20 minutes.
