I have finally started being able to eat again after my oral surgery, even though I am extremely slow. I have been wanting to make a spicy chicken dish, and figured this past weekend would be a good time to try it out as I don't like to make spicy stuff for my parents since my Dad is allergic to most peppers and my Mom can't eat spicy stuff. This has just enough spice to satisfy, but not so much that it is unbearable. I also made Parmesan panko encrusted zucchini and squash, that will be included in the next post. With this I served a steamable Green Giant veggie blend.
Ingredients
* 1 lb boneless, skinless chicken breast tenders
* 1/2 cup reduced sodium soy sauce
* 1/4 cup apple cider vinegar
* 1 tsp minced garlic
* 2 tbsp pepper
* 1 tsp salt
* 2 tsp paprika
* 1 tsp ground cayenne pepper
* 1/4 cup honey
* 1/5 cup Sriracha
* pinch of red pepper flakes
* 2 tbsp ketchup
Directions
Preheat oven to 450. Combine all ingredients in one bowl and whisk well to blend.
Season chicken with salt and pepper as desired. Pour sauce over chicken, reserving some for basting.
Bake chicken 30 minutes, basting with remaining sauce during last 10 minutes.
This was delicious on it's own, although it was also tasty dipped in additional Sriracha. My boyfriend loved every bite of this! Served with a variety of veggies this was a fairly healthy dinner.
