Shrimp Scampi

My boyfriends' parents are in Vegas, so until we move into our place hopefully later this month, this was our alone week. I have gotten to cook dinner for him each night and curl up to watch TV after. I haven't posted yet since I have been busy with school and work and the gym... That's right guys, I took the plunge and joined a gym!! We will see how this progresses, but that brings me back to the dinners. I have been making more calorie conscious options and this was the first of the calorie conscious dinners. This shrimp scampi was the first on the list and I served with steamed broccoli, vegetable pasta and, in a little bit of a cheat, cheddar chive biscuits and baked mozzarella sticks.

Ingredients

* 1 lb medium shrimp, I used devined and peeled even though the tails were left

* 1 Packet Italian dressing mix

* 1 stick of butter

* 1 lemon

* 1 tbsp red pepper flakes

*2 tbsp parsley

* 1 tsp garlic salt

Directions

Preheat oven to 350. Place all ingredients in baking dish, slicing lemon into quarters and squeezing 2 quarters over shrimp. leave out last two quarters of lemon.

Bake 20 minutes or so, then stir and squeeze remaining lemon over shrimp and bake another 5-10 minutes.

That's literally it!! This scampi is super delicious and pretty much cooks itself!!
