In my attempts to eat better and become healthier, I have been making a more conscious effort to eat more fruits and vegetables. This dinner was full of nutrient packed vegetables, and I will definitely be making this again soon. Simple, healthy and extremely filling, this will become a go-to on nights that time is short but you don't want to hit the drive-thru.
Ingredients
* 2 heads Bok Choy
* 2 cups fresh snow peas
* 1 small head of broccoli (only the florets needed)
* 1 cup sliced carrots
* 1 can baby corn, drained
* 4 small pork medallions, about 1 lb total
* 1/2 cup sweet chili sauce
* 3 tbsp Sriracha sauce
* 4 tbsp sesame seeds
* Olive oil for frying
* 2 tbsp red pepper flakes
Directions
Add a small amount of oil to large frying pan and heat. As pan heats, slice pork into small strips. Add pepper flakes into oil once it starts smoking, then add in pork in a single layer.
Leave pork on one side until it has a nice crust formed. Flip and continue cooking all the way through. As the veggies take very little cooking time, we want the pork completely done so as to avoid illness. In a bowl, mix sriracha, chili sauce, and sesame seeds. On high heat, put veggies in pan and pour sauce over mixture. Keep stirring to avoid burning and ensure even cooking. Cook about 5-10 minutes.
For this I kept up the vegetables and found a steamer back of Asian riced cauliflower in the frozen section and served this with it. You could hardly tell it wasn't normal rice. Well, maybe, it was tastier than normal rice.
