After a hectic few weeks I am back with another creation! In between working and school my boyfriend and I have been packing our stuff and looking at the place we will be moving into shortly! Meanwhile I have tried to stay within my diet limits that I set for myself and have, for the most part, been successful. This meal is super filling, comforting and easy to make. It is much lower in calories than it looks and tastes AMAZING.
Ingredients
* 1 lb turkey sausage or kielbasa ( I used a mixture of 1/2 lb each turkey kielbasa and turkey sweet Italian sausage since that is what I had on hand.)
* 1 bag shredded coleslaw mix (I used this to add carrots to the mix and save time grating, although a rough chop would also be great)
* 1 bag of frozen potatoes O'Brien
* 1/2 cup stone ground mustard
* 1 tbsp Worcestershire sauce
* 3 tbsp white wine vinegar
* 2 tsp paprika
* 3 tsp black pepper
* 1 tsp red pepper flakes
* 1 tsp salt
* EVOO to saute (about 3 tbsp)
Directions
Heat small amount of oil over high heat in skillet. Slice sausages into bite size pieces then saute in pan until crispy on both sides.
After sausages cook, take them out of pan and brown potatoes according to package directions. Once they have been browned remove them from pan as well and add in cabbage to saute
While cabbage is sauteeing, in a small bowl mix mustard, vinegar, Worcestershire and all spices. Once cabbage is sauteed, add potatoes and sausages back in and pour sauce over mixture. Gently turn to coat. Lower heat to simmer and let simmer 5-10 minutes to allow flavors to blend.
This was a super easy meal, even though it has to be cooked in steps due to differing cooking times, and I simply served it with a cucumber dill salad. This is in frequent rotation due to the comforting delicious flavor with lower calories.
