I made this casserole in an attempt to clean out our freezer and fridge for Christmas and New Years goodies, and I enjoyed it enough that I will be making it again soon. Hearty, filling and simple this dish is great for cold winter meals at any time of the day, for dinner it would work well with salad, or for breakfast with coffee, juice and toast.
Ingredients
* 1 dozen eggs
* 1 cup of milk
* 1 lb breakfast sausage
* 1 lb bacon
* 12 ounces of potatoes O’Brien
* 2 tsp hot sauce
* 1 tbsp black pepper
* 1 cup shredded cheddar
* 1/8 cup diced chives
Brown sausage and crumble. While sausage is browning, dice bacon up into bite size pieces. Drain sausage and add bacon to sausage pan, frying while sausage drains. Preheat oven to 425. Layer potatoes in bottom of 9x13 casserole dish. Layer sausage over potatoes and drain bacon. In large bowl whisk eggs, milk, hot sauce and pepper. Layer bacon over sausage and pour egg mixture over meats and potatoes. Sprinkle with cheese and chives, then bake for 20 minutes until eggs are fully cooked through. This is a great dish to make in muffin tins as well for quick carry breakfasts, lowering baking time to 10 minut3es until individual muffins are set.
