Today I am going to start showing some of the healthier meals I have started. I am trying to make a conscious effort to eat more whole foods and healthier options not only for health, but because my wedding is in May!!! I started out making sloppy joes one morning but when i got home to make dinner I wanted meatloaf, so I decided to combine these into one dinner. I swapped out ground beef and normal bread crumbs for ground turkey, whole grain bread crumbs and steel cut oats. I did splurge with the sloppy joe sauce, but life is about balance!! Served with sweet yellow and white corn and a lemon herb sauced spinach and couscous this meal was filling, relatively healthy and delicious! I did top this with a little spicy sugar free BBQ sauce because I used a bourbon bbq sloppy joe sauce from Manwich and it added a little spice. There's also the fact that I use food as a way to eat condiments sometimes... it's a problem lol. Try this and see what you think!
Ingredients
* 1 lb ground turkey
* 1 egg
* 1/4 cup steel cut oats
* 1 cup whole wheat bread crumbs
* 1 can sloppy joe sauce (I used Manwich Bourbon BBQ as it is what I had)
* 2 tsp smoky hot sauce (Cholula, chipotle is a good brand)
* 2 tsp black pepper
* 1 tbsp parsley
* 1 tsp garlic salt
* 1/2 tsp cumin
Directions
Preheat oven to 450. In a large bowl add all ingredients, saving 1/8 cup of sloppy joe sauce. Mix well, use your hands and don't be afraid to get dirty! With this you may need more bread crumbs or oats, but this worked well for me and helped the meatloaf maintain it's shape. Pour into small casserole dish, level out, and top with half of remaining sauce. Bake 40 minutes, cover with remaining sauce and bake another 5- 10 minutes.
Served with veggies, a salad or couscous this is a fairly healthy meal with not much prep work!
