Australian Zucchini Slice

It's time to visit the land down under on Around the World in 196 plates! Part of me has always wanted to visit Australia to see all the wildlife and beauty, but the fact that Australia is also home to the deadliest animals in the world has put a damper on traveling there. Instead I will travel from the safety of my kitchen and make this zucchini slice! Almost like a quiche this was tasty and filling, although I would add more zucchini next time as I have grown to love it in my journey to eat healthier. I served this with a spicy sriracha laced chicken and Brussels sprouts and the mild flavor balanced the spicy heat of the other dishes quite nicely.

Ingredients
* 5 zucchini, grated
* 1 small yellow onion, grated
* 1 lb bacon, chopped and cooked, retain grease
* 1 1/4 cup shredded sharp cheddar
* 1 cup all purpose flour
* 1 tsp baking powder
* 1 tsp salt
* 1 tsp black pepper
* 5 eggs, beaten
* 1 tsp cayenne pepper
* 1 tbsp dried parsley
Directions
Preheat oven to 350. Grease an 8x8 pan. Combine all ingredients (including bacon grease) in a bowl and blend well. Be careful not to over mix as the flour will get gummy. Pour into pan and bake for about 50 minutes. Top will be golden brown and a toothpick inserted into the center should come out clean.
This was listed as a main entree, even though I used it as a side. With a simple salad this would be a quick, easy dinner.
