As promised on Facebook, I am back with Hawaiian BBQ Chicken. I have been away a long time, and I apologize. Life just took over in a huge way, from a wedding, to a baby with a pregnancy that almost killed me and our baby, to becoming new parents and COVID. I'm back, finally a little better, and ready to share all of my recipes with you again! Today we are starting with a simple crockpot recipe. My favorite since I'm now working 10 hour days and we have a little one crawling and trying to stand everywhere. This meal was honestly made up from stuff I had sitting in my pantry that I am trying to use up since we are house hunting and I don't want to move more than I have to move when we finally find a forever home. Simple, tasty and filling! Here is my Hawaiian BBQ Chicken!
Ingredients
8 boneless, skinless chicken thighs
1/2 cup light brown sugar
1 cup Sweet Baby Rays Hawaiian BBQ Sauce
1/2 cup diced red onion
20 oz can crushed pineapple with juice
1 tsp white pepper
1/2 tsp salt
1 tsp paprika
2 tbsp apple cider vinegar
1 tsp cayenne pepper
1 tbsp minced ginger (I used ginger paste)
Directions
Put chicken in crockpot, and cover with onions. In another bowl mix remaining ingredients together, then pour over chicken. Cook on low for 6-8 hours. Garnish with sesame seeds. I served this with a simple Asian inspired salad with an Asian vinagrette and cilantro lime black beans and rice.
