Good morning all my crafty cooks! It's been awhile. I really need to do better, and I apologize. Life keeps taking over and I fail to keep up how I want too. I'm going to try to be better this year, hoping it's nothing like 2020 was. Today I'm coming back with a 30 minute Meatless Monday meal, baked 3 cheese ziti! It was even better than I had hoped for, and I'm so glad this made a ton so we have leftovers. Perfect for those nights you don't have much time but want something that tastes like it took all day to cook, this ziti pairs perfectly with a quick garden or Caesar salad and garlic bread. I am also a proud new homeowner with my husband, so budgeting is even more in effect before. The total cost breakdown per serving of this pasta is $0.95 per person, excluding the staples such as eggs, pepper, and other spices in most pantries. I got all of these ingredients at Walmart, and did use store brand in an effort to save money, however none of this tastes "cheap" in the least.
INGREDIENTS
16 oz ziti
1 jar (24 oz) pasta sauce ( I used a traditional marinara)
15 oz low fat ricotta cheese
2 eggs
1 tsp black pepper
1 tbsp Italian seasoning
1 tbsp garlic powder
2 tsp red pepper flakes
6 oz shredded parmesan
8 oz shredded mozzarella
Cooking Spray
DIRECTIONS
Boil pasta according to directions until al dente. drain but do not rinse. While pasta is boiling preheat oven to 425. Mix ricotta, seasonings and egg, blending well. Once pasta has drained mix it with pasta sauce. After spraying a baking dish (I used an 8x13) with cooking spray, layer half of pasta, all of the ricotta, all of the parmesan cheese, the remaining half of the pasta, and all of the mozzarella cheese. Bake until heated through (to allow egg to cook) about 20 minutes.
So delicious, we are even having it for lunch again today!
