Buffalo Chicken Chaffles

I'm here today with a confession. I LOVE buffalo. Buffalo wings, buffalo chicken dip, buffalo sauce on celery and carrots. I even have a buffalo chicken meatloaf I make. All of this is pure happiness to me, however I am ALSO making healthier life changes. I'm trying so hard to lose weight and be a better role model for my son, as well as live a longer, healthier life for him with more energy to play and run with him. As a result I am making healthier changes as part of a lifestyle overhaul. I am not going to say I'm "dieting" because every time I have dieted before, I have failed.


With this in mind I have (for financial and health reasons) slowed but by no means completed my tour around the country OR the globe, but I will also be interspersing healthy meals and snacks. I am mixing elements from everything, and this comes to us from the keto world. Quick, keto and DELICIOUS, this filled my cravings for something carbs (without the excess carbs) and buffalo flavored. Ingredients

  • 1 10 oz can chicken (drained and weighed, this is 5 oz of chicken)

  • 2 large eggs

  • 3/4 cup reduced fat shredded cheese (I used Kroger Mexican blend as it was what I had on hand)

  • 1/3 cup Buffalo wing sauce (again, use what you have on hand, I had Sweet Baby Rays for the sake of my nutrition label)

  • 1 tbsp garlic powder

  • 1 tbsp cayenne pepper (more or less depending on your preference, I wanted spicy)

  • 1 tsp ground white pepper

  • Oil spray for waffle maker

Directions


Remove with a spatula or wooden spoon to avoid scratching maker, and continue until all mixture is cooked. This made lunch for 4 days as I had 2 chaffles with fat free ranch and some celery and carrots each day. They can be stored in an airtight container in the fridge and just need a very quick re-heat (30 seconds on high in my microwave had them steaming again). Give these a try, and remember if you are like me, small changes lead to bigger results
