Georgia, the state of peaches, peanuts, pecans and vidalia onions. Known as some of the sweetest onions in the world, I am in love with these onions. I wanted to post this in the summer and make a fresh cobbler as well, but given the timing I went for a Georgia style sauced wings with my casserole. To be honest, even with my love of onions I was a bit iffy on how an entire casserole of them would be, but rest assured, this is delicious!
As for my wings, I found this sauce and it is the closest I have been able to find to a the "Colorado Coppers" flavor at Wild Wing Cafe. Given that the local Wild Wings didn't make it through the pandemic and I would have to travel a few hours to the closest one, these tangy, barbecue-y, mustardy wings are perfect! Not exact, but close enough to satisfy my cravings without driving hours.

Georgia Gold Wings
1 Cup Yellow Mustard
2/3 Cup Dijon mustard
1/2 Cup cider vinegar
1/3 Cup molasses
1/3 Cup honey
2 Tbsp bacon drippings
1 Tbsp Worcestershire sauce
1 Tbsp garlic powder
1 Tbsp ground black pepper
1 Tsp cayenne pepper
1 Tsp dried oregano
1 Tsp white pepper
1/2 Tsp Liquid Smoke (Hickory Flavor)
1/2 Tsp Lawry's Seasoning Salt
1/2 Tsp smoked paprika
Make a paste with the dry ingredients and some of the vinegar and bacon drippings. Lightly simmer this over medium heat until slightly bubbling and then combine the remaining ingredients. Raise the heat to medium high and bring to a slow simmer. Reduce heat and simmer for 15 minutes. Refrigerate and it should keep for several weeks in a sealed jar.
Vidalia Onion Casserole
4 to 5 large Vidalia or sweet onions, sliced 1/4 inch thick
1/4 cup butter, unsalted
1/4 cup sour cream
3/4 cup grated Parmesan cheese
1 Tsp paprika
1 Tsp garlic powder
10 butter-flavored Ritz crackers, crushed
In a large skillet over medium heat, saute onions in butter until tender. Remove from the heat; stir in sour cream, garlic powder and paprika.
Spoon half into a greased 1-qt. baking dish. Sprinkle with cheese. Top with remaining onion mixture and crackers. Bake, uncovered, at 350° for 20-25 minutes or until golden brown and bubbly.
