It's Spring! The birds are chirping!!! Ok, so not here so much, it's raining and cold, but I'm still excited anyway.
Today I wanted to do something with birds, so I thought I would present my Peeps Chick cake. Bright, colorful and full of flavor, this was a star at the dessert table last year and one of my first attempts at cake decoration.
Ingredients
* 1 box of white cake mix
* 1 1/4 cups water
* 1/3 cup vegetable oil
* 3 egg whites
* 1 tsp vanilla extract
* 1 box lemon Jello mix
* 1 box raspberry Jello mix
* 1 container vanilla or cream cheese frosting ( I used whipped vanilla)
* Pink and Yellow food coloring
* 1 box each blue, pink, yellow, purple and green bird peeps
* 1 small box robins egg malt balls
Directions
Preheat oven to 350*. Grease and flour two 8" round pans. Mix cake, water, eggs and oil according to package directions, mix in vanilla extract. Separate batter into two bowls, adding lemon Jello mix to one bowl, and raspberry Jello mix to other bowl. Pour batters into separate pans. Bake as directed on package. Take out and put on cooling rack to cool completely.
Once cakes have cooled, mix icing. Take 1/4 cup and mix with pink food coloring to desired tint, mix remaining icing with yellow food coloring to desired tint. Layer cakes with frosting, then ice completely. Take pink frosting and pipe into a circle in center of cake to act as the 'nest' surround this circle with peeps in alternating colors. Fill center of 'nest' with Robin's Eggs and display!
