Cajun Fajita Loaded Fries

If there is one thing my family loves, it's fries. Baked, fried, loaded, smothered, covered and plain. Something I love? Mexican food. So when my family and I couldn't decide what to make for dinner, I threw these together, combining their love of fries and my love of Mexican food. Quick and easy, these are sure to be a hit with your family.

 

Ingredients

*1 lb boneless skinless chicken breast strips *1 frozen bag tri-color peppers and onions *2 Tbsp olive oil *1 packet Fajita seasoning *1 lb. shredded cheese (I used Hot Pepper Blend) *1 bag seasoned fries

Suggested Toppings Include;

*Cilantro *Sour cream *Salsa *Banana peppers *Jalapeños *Hot sauce

Directions

Preheat oven to 400, and in a baking dish coat peppers and onions with olive oil and Fajita seasoning. Bake chicken 35 minutes, putting fries on top rack of oven for last 5 minutes of baking. Take chicken out to settle and cook fries an additional 20 minutes.

Let chicken rest 5-10 minutes before slicing to put on fries. In a cast iron skillet layer fries, half of cheese, chicken mixture and remaining cheese. Bake 5 min or until golden.

These quick, simple fries are sure to please and fill everyone! I hope you enjoy these as much as we did.
