Mini Banana Cheesecake Pies

Last Sunday I made a family dinner for my boyfriend, parents, one of my sisters and her fiance. I decided to finish off the meal with a little something sweet and came up with two variations of pies. A banana cheesecake pudding pie, and a cookies and cream pie. I will be posting both today, but am starting with the banana. This pie takes less than 10 minutes to make, then just pop them in the fridge to set and they will be ready within an hour.

Ingredients

* 1 package (1 oz) sugar free cheesecake instant pudding mix

* 1 package (1 oz) sugar free banana instant pudding mix

* 4 cups cold milk, I used 2%

* 6 mini graham cracker crusts

* 1 small banana, sliced

Directions

In large bowl add both pudding mixes, and milk. Whisk until well blended with no lumps remaining. Allow to sit 3-4 minutes so mixture starts to thicken.

Once mixture has started to thicken, spoon into shells. Top with one slice of banana and allow to refrigerate at least one hour.

These were a hit and will definitely be made again soon.
