Colorado Cowboy Casserole

Today on "Dinin' USA" we are going to continue through the C states, visiting Colorado. There were numerous options that came up for Colorado, but for some reason this stood out to me with the tater tots. Many people don't like tater tots, and while I prefer fries I can eat these too, these almost melt in your mouth leaving a potato taste but really not much of the texture people hate. My fiance was on the fence about this but ended up loving it. Simple to make and deliciously filling this will be in our rapidly growing dinner rotation soon. While not the most visually appealing, the taste more than makes up for the eye appeal.

Ingredients

* 1 lb lean ground beef

* 1 small onion, diced

* 1 can cream of mushroom soup

* 1 can corn, drained

* 1 can mild diced green chilies, undrained

* 2 tsp black pepper

* 2 tsp cayenne pepper

* 1 cup sharp cheddar, grated

*2 cups tater tots

Directions

Brown beef and onion over medium high heat. Preheat oven to 425 while browning. Drain beef and stir in soup, corn, chilies, pepper and cayenne. Mix well and layer into square baking dish. Cover with cheese and then layer tater tots. Bake 15-20 minutes until cheese is melted and tater tots are done.

I served this with a simple salad and it was warm, filling and delicious. Give it a try and let me know what you think!
