Panko Parmesan Veggies

In addition to the Snapdragon Chicken I made this past weekend, I also made oven baked veggies. I coated them with panko and parmesan to make them richer and more of a "treat" for the kids in the household. These were delicious, and I have plans to try to fry these next time I want a cheat day.

Ingredients
* 2 yellow squash
* 2 zucchini
* 3 eggs, beaten
* 2 cup panko crumbs
* 1/2 cup Parmesan cheese
* 2 tbsp pepper
* 2 tsp salt
* 1 tbsp parsley
Directions
Preheat oven to 450. Slice squash and zucchini into spears and set up station for breading, beating eggs in one bowl and combining panko, Parmesan, salt, pepper and parsley in another.



Bread veggies and lay flat on pan, bake for 20-30 minutes until just soft and cooked through.

I dipped these in a horseradish based sauce from Sweet Baby Ray's and it was exceptionally delicious. Next time, in addition to frying them I am going to try to make my own horseradish sauce.
