Italian Pasta Salad

I made this pasta salad for a work pot luck since our supervisor was retiring. We hate to see her go, but I completely understand why she is leaving as an opportunity closer to home came available. For this I wanted to attempt something different from my normal ranch pasta salads, and decided to do a "pizza" style pasta salad without the marinara. This was raved about within the clinic and I had a few people ask for the recipe. Insanely simple, this pasta salad is a sure fire hit for any pot luck or cook out!

Ingredients

* 1 16 oz box tri color rotini

* 1 bottle Kraft sun dried tomato vinaigrette

* 2 tbsp oregano

* 1 tbsp red pepper flakes

* 4 tbsp Parmesan cheese

* 1 can sliced black olives, drained

* 1 green pepper, very finely diced

* 1 bag mini pepperoni

* 4 ounces crumbled Feta cheese

Directions

heat water to boil. Once boiling, salt water and add pasta. While pasta is boiling combine dressing, oregano, red pepper and Parmesan, whisk well.

Drain pasta and allow to cool one minute. In large bowl mix with olives, green pepper and pepperoni. pour mixture over and toss well to coat.

Cover and refrigerate 10-20 minutes before adding Feta to prevent melting. Add in Feta and gently toss to combine. Quick, easy and pot luck friendly!
